Fifi's Sunset Spice Tea

I bring tea to the beach each Sunday and one of our group, Faye, keeps asking for a caffiene-free tea...so Sunday past, I made a tea without caffiene and incorporating some ingredients that help sleep - lemongrass and rooibos tea

I was inspired by this tea which I hope to order and taste someday soon

Gypsy Fire Light Chai

Meanwhile - hope you enjoy making this at home

A warming, evening tea to help soothe you to a good night’s sleep

Place the following ingredients in a saucepan with about 2 cups of water, bring to boil and simmer for about 5 minutes
·         4 leaves lemongrass (about 15-18” long)
·         ½ tsp cinnamon
·         ¼ tsp cardamom
·         ¼ tsp black pepper
·         ¼ tsp nutmeg
·         3 cloves
·         1 inch fresh ginger lightly crushed

Pour off through a strainer into a flask or teapot with a teacosy

Add 2 more cups boiling water and 2 bags organic rooibos tea

Allow to draw for 5 more minutes, remove rooibos teabags, serve as is or add honey and/or milk to taste

I used rough ground spices except for the ginger and lemongrass which were both fresh and the cloves which were whole...experiment and see what you like - you could add cayenne pepper, soursop leaves, orange peel...
